This recipe is from Nigella Lawson’s “How To Eat, The Pleasures and Principles of Good Food“.
1 lb clementines (about 4-5)
6 eggs
1 cup plus 2 tablespoons sugar
2 1/3 cups ground almonds
1 heaping teaspoon baking powder
Wash the clementines and put in a pot. Cover with cold water and bring to a boil, cook for 2 hours. Drain and cool. Cut each clementine in half and remove seeds. Put them into a food processor and mash them up.
Preheat the oven to 350 and prepare your 8″ springform pan.
Beat the eggs. Add sugar, almonds and baking powder. Mix well and then add the clementines.
Pour into the pan and bake for about an hour.
I just dust the top of mine with powdered sugar.
